Stacked Enchiladas


Stacked enchiladas are the easy way to make this all-time favorite comfort food. There is no need to heat the oven because these flavor bombs are made in a skillet in just a matter of minutes. They are a fantastic way to use up any roasted meats you have on hand or you can keep them vegetarian by using your favorite beans as the protein instead of meat, or use them both together.

2 soft corn tortillas
1/2 cup Larry’s All Natural Chipotle or Ranchero Enchilada Sauce
1/2 cup chopped cooked chicken, beef, pork or beans
1/4 cup grated cheese
1 tablespoon each fresh minced cilantro and onion

1. Place one corn tortilla in a medium-sized skilled over medium low heat.
2. Top with the meat and/or beans, 1/2 of Larry’s Chipotle Sauce, and half of the cheese.
3. Place the second tortilla on top of that and spoon the remaining Larry’s Chipotle Sauce over that.
4. Sprinkle the cheese on top and cover the skillet with a lid. Simmer until the cheese melts.
5. Remove the stacked enchilada to a warm plate and sprinkle with the fresh onion and cilantro.
6. Serves one.
