Chili Verde Pork2020-01-28
Chili Verde Pork is like a Mexican pork stew. Succulent chunks of pork are tender and complement the melded flavors tomatillos, onions, cilantro and garlic. Serve this dish with Mexican rise and your favorite beans either black, red or pinto and sprinkle with chopped cilantro and a squeeze of lime.
1.5 lbs pork loin or pork shoulder cut into 1” pieces
½ teaspoon each salt and black pepper
1 tablespoon vegetable oil
½ cup diced white, yellow or red onion
2 minced cloves fresh garlic
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 cup chicken broth or water
1 16 oz jar Larry’s All Natural Salsa Verde
½ cup minced fresh cilantro
Juice from 1 large fresh lime
Sprinkle the pork with the salt and pepper to season.
Warm the oil in a medium sized pot and add the pork. Brown the pork lightly and add the onion,
garlic, cumin and oregano. Stir.
Add the chicken broth or water, cover the pot and simmer on medium low heat for about 90
Add the jar of Larry’s All Natural Salsa Verde, cover and simmer for another 30 minutes.
Sprinkle the fresh minced cilantro and the lime juice over the Chili Verde and serve with
Mexican rice and beans.
