Ground beef tacos are America’s favorite taco. But I didn’t want anything crumbly for these tacos. Instead, I wanted to showcase these locally-made nixtamal tortillas (Mi Tierra), really good ground beef from my local butcher (McCarroll’s) and Larry’s All Natural Chunky Salsa. People like cheeseburgers and people like tacos, so cheeseburger tacos were born. I’m told the new vegan burgers would be pretty good for this, too.
4 nixtamal tortillas or your favorite
12 ounces hamburger or your favorite
4 ounces sliced cheddar cheese
8 ounces Larry’s All Natural Mild or Medium Chunky Salsa
1/2 cup minced fresh cilantro
8 tablespoons sour cream
1 lime quartered
||Place the nixtamal tortillas in a dry skillet over low heat, covered, until they are warm and just pliable.
||Form two patties with the ground beef and season them with salt and pepper.
||Place them in another skillet and cook them until medium rare.
||Place the cheese on the burgers and cover them until the cheese melts.
||Lay the warm tortillas on plates, cut the burgers in half and place one section on each tortilla.
||Spoon Larry’s Chunky Salsa on top, sprinkle with the cilantro and top with a dollop of sour cream.
||Squeeze the lime over the cheeseburger tacos and serve.
