Easy Cinco de Mayo Party Food

1 16 oz jar Larry’s All Natural Ranchero Sauce
1 16 oz can black or pinto beans, drained
2 cups sour cream
2 avacados, pitted and sliced thin for layering
2 teaspoons lime or lemon juice
2 cups shredd Cheddar or Monterrey Jack cheese
4 green onions diced, white and green parts
1/4 cup black olives pitted and sliced
1 tomato, diced
1 bag tortilla chips
Spread the beans in the bottom of a 9″ square or 10″ round serving dish.
Spread the cream cheese over the beans.
Spread a generaous layer of Larry’s All Natural Ranchero Sauce over the sour cream.
Layer the avocado slices over the sauce and sprinkle with the lime or lemon juice to prevent the avacado from turning brown.
Cover the avocado with a shredded cheese, then sprinkle the green onions, diced tomato, and black olives over the cheese. Serve with tortilla chips.
Chipotle Beef Enchiladas and Fiesta Corn Salad
- 1 tsp Vegetable Oil
- 1 lb lean ground beef
- 1 16 oz jar Larry’s Ranchero Sauce
- 12 soft corn tortillas
- 3 cups shredded Monterey Cheese
- 1/4 cup minced fresh cilantro
- 1 cup diced avacado
- Freshly squeezed juice of 1 lime
- 1 cup frozen or fresh corn, cooked and cooled
- 1 cup canned black beans, rinsed and drained
- 1 cup tomato, diced
- 1/2 cup red onion, minced
- 1/4 cup fresh jalapeno, seeded and minced
- 2 tablespoons vegetable oil
- salt and pepper to taste
Preheat the oven to 350′ Saute the ground beef in the oil in a large skillet over medium heat for five minutes or until cooked through.
Add half a jar (8oz) of Larry’s Ranchero Sauce and cook for five minutes until hot and bubbling.
Warm the tortillas by wrapping them in a paper towel and heating them in the microwave for 1 minute.
Spoon equal portions of the meat mixture on each warm tortilla, sprinkle a tablespoon of cheese on each, roll them up and place them in a 10 x 14 baking dish.
Pour the remaining Ranchero Sauce over the enchiladas and top with the remaining cheese.
Bake for 30 minutes or until the enchiladas are heated through and the cheese is melted.
Garnish with minced cilantro and serve with Fiesta Salad
