Austin Breakfast Taco
Austin, TX has more than 2,000 food trucks. Most of them sell breakfast tacos.
One of the best ways to start your day in the Lone Star State. My recipe calls for chorizo sausage, potatoes, avocado, scrambled eggs, grated cheese and Larry’s Organic Tomato Salsa. Leave out the chorizo and you have a great vegetarian breakfast meal.
Boil the potatoes in the recipe ahead of time and you’ll have a delicious breakfast that’s ready in 15 minutes!
For the scrambled eggs:
6 large eggs
2 tablespoons milk or half and half
¼ teaspoon each salt and pepper
1 tablespoon butter or vegetable oil
8 whole grain, corn or wheat tacos, homemade if possible
- Make the scrambled eggs by mixing the eggs, milk, salt and pepper. Heat the butter or oil in a non-stick skillet and cook eggs over medium heat, stirring often until they are scrambled the way you like them. Keep warm.
- For the filling, heat the oil in a larger skillet and cook the sausage and potato over medium heat until lightly browned and hot.
- Warm the tortillas over a low gas flame or in a dry skillet for 30 seconds on each side. Or wrap them in a clean kitchen towel and place in the microwave for one minute.
- Fill the tacos with the scrambled eggs, sausage and potatoes, top with avocado, sprinkle with cheese, spoon Larry’s Organic Tomato Salsa over each and serve two tacos per person.
